Abstract

This image is an original drawing which correlates to the choices we make that either help or harm us on our path to holistic and healthy lifestyles. With my research examining the intersection between the bitter flavors found in the pharmaceutical industry and how those same flavors might deter us from enjoying healthy food options, it is important to me that we each identify the impact of what we put in our bodies. Through my studies I continue to identify how consumers perceive bitter flavors to better understand how bitter taste in vegetables can be improved, allowing the gap to close between supporting our health with prescription drugs and supporting our health through diet and nutrition. As someone who has experienced the effects of poor health within marginalized communities, I’ve seen how knowledge is the ultimate power by allowing us to make informed decisions. It is my hope that one day the opportunity for every person to live a full and healthful life transcends the boundaries of class, race, and social status by becoming less of a choice and more of an innate human right.
